Tawse Winery

Moray Tawse, the founder of Tawse Winery, is a life-long lover of wine, particularly Burgundy. Inspired by his passion for Burgundian Pinot Noir and Chardonnay, Tawse purchased the Cherry Avenue property in 2000 and opened the winery in 2005. His dedication to producing exceptional wines is reflected in Tawse Winery's success and reputation as a leading organic winery in the Niagara region. It was named Canadian Winery of the year in 2010, 2011, 2012, and 2016. 

Anthony Thevenet
France | Beaujolais | Morgon

Born into a winemaking family, Anthony Thévenet honed his skills first with Georges Descombes and later as Jean Foillard's right hand man. In 2012, he launched his own estate, inheriting vineyards with vines aged between 40 and 150 years.

The wines, crafted from these exceptional old vines coupled with great terroir, captivated us with their complex bouquet, balanced ripe red fruit palate, and energetic expression. Thévenet's organic farming and hands-off winemaking approach create wines that fuse tradition with qualities that satisfy the contemporary demand for wines that can be enjoyed in their youth.

The domaine now includes parcels scattered around the region, allowing Anthony to craft a range of distinct expressions of Gamay.

Champagne Aubry
France | Champagne | Petite Montagne de Reims

The Aubry family, rooted in Champagne since 1790, crafted a unique story. Brothers Pierre and Philippe, current owners, sought to replicate the essence of 18th-century champagne. However, they needed to recover endangered grape varieties like Arbanne, Petit Meslier, Fromenteau, and Enfumé. After an extensive search, they successfully replanted these ancient vines. Blending them with Pinot Noir, Pinot Blanc, and Chardonnay, they created the Le Nombre d’Or cuvee, harmonizing tradition and innovation. 

Champagne Mousse Fils
France | Champagne | Vallée de la Marne

The Moussé family, with a heritage in vine growing, began bottling under their own label in 1923. Led by fourth-generation winemaker Cédric Moussé, their 5.5-hectare estate is focused on Pinot Meunier (83%), complemented by Pinot Noir (14%) and Chardonnay (3%). Champagne Moussé Fils showcases their expertise in crafting wines that are both rich and powerful, yet balanced and refined, with a pronounced ripe fruit profile. This dedication to quality and sustainability elevates Pinot Meunier from a supporting role to the star of the show.

These wines, including their prestigious Spécial Club Champagnes, can be enjoyed after a year of disgorging, although further aging will enhance their complexity.

Champagne Philippe Glavier
France | Champagne | Cramant

In the village of Cramant, Philippe and Véronique Glavier established Champagne Philippe Glavier in 1995. Their small family estate, spanning 4.5 hectares, focuses on crafting exceptional Blanc de Blancs Champagne. The estate boasts 47 Chardonnay parcels spread across esteemed Grand Crus including Avize, Cramant, Oger, and Le Mesnil-sur-Oger. Each parcel is harvested at optimal ripeness and undergoes separate tank fermentation with full malolactic fermentation. The resulting wines exhibit intensity, precision, and a profound expression of their terroir.

The range offers the authentic taste of the captivating freshness and refined finesse found in Chardonnay from the prestigious Côte des Blancs.

Domaine Charly Nicolle
France | Burgundy | Chablis

A young and dynamic winemaker, Charly hails from a winemaking family in Chablis. Based in the village of Fleys, and with the domaine being run together with his wife Lucie Thieblemont, the family now farms about 13 hectares, with holdings in the Premier Crus of Les Forneaux and Mont de Milieu, as well as parcels in Petit Chablis and AOC Chablis. They also produce a Crémant de Bourgogne Blanc de Noirs that benefits from Charly’s stint in Champagne before joining the family domaine.

The wines here are classical Chablis in style, vibrant but with increasing intensity as we move from the Village to Premier Crus. The wines demonstrate consistent quality across different vintages, and Charly’s winemaking skills were recognised by being awarded the Young Talents Trophy in the Chablis category in 2019 (GJPV Bourgogne Tropée Jeunes Talents) following a blind tasting by 70 wine industry professionals.

Domaine Clement Lavallee
France | Burgundy | Chablis

Clement Lavallee produces Chablis wines in a minimal intervention style, and has been shining light on lesser known appellations such as St Bris (the only appellation the Sauvignon Blanc grape is allowed in Burgundy) and Irancy.

Born into a Chablis winemaking family, Clement traveled and learned before returning to the family estate. Stints at various estates, including Armand Heitz in the Cote de Nuit, Domaine Chapoutier in Rhone, and Chateau Margaux in Bordeaux, were followed by time spent in Australia.

He returned to the family estate in 2018, but soon realised he wanted to do things differently and started his own Domaine, initially with 1.6 hectares in Chablis. After his first vintage in 2019, his father gradually passed on to him more vineyards until his retirement in 2021. With the family vineyards now under his sister Caroline and his control, the siblings together manage 14 hectares of vineyards under the Domaine Clément Lavallée label.

Domaine de la Noblaie
France | Loire | Chinon

Jérôme Billard, the third-generation proprietor of Domaine de la Noblaie, carries on the family tradition since 1952. Situated on a high point in Chinon, the estate cultivates 22 hectares of vineyards primarily dedicated to Cabernet Franc, with a smaller Chenin Blanc holding. With experience at prestigious estates like Petrus, Dominus and Sacred Hill, Jérôme and his wife, Élodie, focus on crafting elegant, fruit-driven Chinon wines with aging potential, while avoiding any vegetal notes or rusticity often associated with wines from the region. These versatile and great-value wines are perfect for food pairings. 

The domaine was considered "The Virtuoses of the Loire River" (Les Virtuoses Du Fleuve Loire) and was awarded 4 stars by the Bettane and Desseauve Guide 2024.

Domaine Frantz Chagnoleau
France | Burgundy | Maconnais

Frantz Chagnoleau, together with his wife Caroline Gon (winemaker at Domaine des Héritiers du Comte Lafon), owns 8.4 hectares of vineyards. They focus on cooler, higher-altitude sites and practice organic farming. Hand-harvesting the grapes, they ferment and age the wines on lees in mostly used barrels. Their Mâconnais expressions exhibit tangy, tensile qualities and a subtle reductive edge, reflecting the contemporary style of the Côte de Beaune. 

Domaine Laureau
France | Loire | Savennieres

Damien Laureau, the "future star of Savennieres" according to La Revue de Vin de France, revolutionizes winemaking in this challenging region. Through sustainable practices like biodynamics and organic farming and low-yield farming, he creates vibrant vineyards. By harvesting golden Chenin Blanc grapes, he defies Savennieres' austere reputation. His wines exhibit a stunning balance of richness, concentration, lively acidity, and impressive length. The estate's Chenin Blanc is now among the appellation's finest, offering immediate enjoyment and excellent aging potential. 

Domaine Lionnet
France | Rhone | Cornas

A traditional Cornas domaine run by the husband and wife team of Ludovic Izérable and Corinne Lionnet, Domaine Lionnet has been organic since 2007, and officially organic since 2012. Whole bunch fermentation, no cultured yeasts, and hands-off winemaking mean the wines are full with apparent tannins when young.   

Ludovic Izerable is making some of the best traditionally styled wines in Cornas right now, but they are by no means rustic or forbiddingly tannic. The tidy cellar here is quite small, a reflection of the fact that this domaine, whose roots in Cornas trace back to 1575, comprises a mere four hectares. The wines are fermented in concrete tanks, with their native yeasts; all whole clusters are used, there’s no fining or filtration, and new oak is brought in only to replace barrels that have outlived their usefulness.   

Domaine Jean Royer
France | Rhone | Chateauneuf-du-Pape

Jean-Marie Royer owns 12 hectares of vineyards, including prestigious sites like Bois de la Ville, Les Grandes Serres, and La Crau near Rayas. Starting his oenology studies at 18 in 1982, he reclaimed family-owned but leased-out vineyards. Collaborating with renowned oenologist Philippe Cambie since 2000, Jean-Marie adopted separate fermentations for parcels and varieties. Picking late for maturity and balance, he employs a slow, cold fermentation process. His goal is elegance and finesse, resulting in Chateauneuf-du-Pape wines known for their fresh fruit and light touch. Even in warm vintages, his style shines, with intensified spiciness and fruit character. These wines, reminiscent of Burgundy, captivate with vibrant red fruit and floral notes. 

Domaine Pierre Martin
France | Loire | Sancerre

Located in Chavignol, Pierre Martin oversees 18 hectares of vineyards at his domaine. With 14.5 hectares dedicated to Sauvignon Blanc, including vineyards in Les Monts Damnés and Les Culs de Beaujeu, he produces highly regarded wines. The soils consist of limestone and Kimmeridgian clay-limestone marl, with steep slopes. Pierre follows organic practices, with certification underway. Minimal intervention is practiced in the cellars, with hand harvesting for site-specific cuvées. Fermentation occurs in steel or wood, respecting the lunar phases. His wines have garnered popularity in a diverse range of restaurants and have proven to be great choices for pairing with food.

Dominique Cornin
France | Burgundy | Maconnais

A 10 hectares estate around the village of Chaintré in Mâconnais. The Domaine has been certified organic and practicing biodynamic since 2003. There are very old vines in many of the plots, with some going as far back as 1909.

Established in 1993, Romain Cornin joined the family estate in 2011 after having stints in the US and New Zealand. He has now taken over from Dominique, and runs the operation together with his wife Adeline. They farm plots with a mix of clay, limestone, and schist soil, and there is a commitment to produce the highest quality and healthiest grape in a rich and living soil. Viticulture and vinification are both with minimal intervention, allowing the wines to express the vineyard’s terroir.

Jean Javillier et Fils
France | Burgundy | Meursault

Nestled between Domaine Coche-Dury and Domaine Roulot in the village of Meursault, this small, family-run domaine was established in 1933 by Jacques Javiliier. The domaine is now managed by Jacques' grandsons, Alain and Thierry Javillier, and comprises 5 hectares of vineyards spanning Meursault, Volnay, and Pommard.

What distinguishes this estate is the long-established organic approach to wine making and its incredibly old vine parcels, some dating back over 100 years, rarely found in Meursault. The Javilliers take a very traditional, hands-off approach in the cellar, minimally intervening to allow the character of the grapes to fully express themselves.

Nearly all the work at the estate is done manually, from tending the soils to harvesting the grapes. The domaine's annual production of around 20,000 bottles focuses on crafting structured, full-bodied white wines and elegant, red-fruited red wines that pair beautifully with refined cuisine. In the vineyards, only sulfur and copper are used for disease management, without any synthetic chemicals. The winemaking follows a non-interventionist approach, with spontaneous fermentations, extended maceration for the reds, and natural malolactic fermentation.

Hofgut Falkenstein
Germany | Mosel | Saar

A renowned producer from Saar whose classic, bright, delicate, yet complex Riesling is made with ultra-traditional winemaking methods.

Grapes are carefully hand-harvested at low ripeness levels and gently pressed, allowing the musts to settle naturally overnight. Fermentation takes place in traditional casks without added yeast, such as 1,000-liter Fuder casks and 500-liter Halbfuder vessels. Each Fuder is bottled separately, and the use of an AP numbering system, along with the occasional nickname for the casks, showcases the individual development and influence of each vessel on the wine’s taste, texture, and depth.

These practices, once common in Saar, have become increasingly rare. Yet, Hofgut Falkenstein remains dedicated to upholding and preserving these cherished traditions on their estate.

Barale Fratelli
Italy | Piedmont | Barolo

Barale Fratelli, established in 1870, has a rich heritage in producing Barolo wine. Francesco Barale, the great-grandfather of the current owner, was a pioneer in this blessed wine's production.

Today, Sergio Barale and his daughters Eleonora and Gloria continue the family tradition, cultivating around 20 hectares of vineyards from Barolo to Barbaresco. The vinification and aging processes prioritize balanced wines that highlight the characteristics of the grape variety and region. The vineyards, carefully selected for optimal positions, contribute to the wines' unique territorial identity. Historic vineyards in Barolo, Castellero, and Cannubi offer elegance, while the Bussia area in Monforte d'Alba brings structure.

Piero Benevelli
Italy | Piedmont | Monforte d'Alba

Founded in 1978 by Piero Benevelli, the estate, now led by Massimo Benevelli, has gained momentum in recent years. With a focus on the classic wines of Langhe, each cuvée showcases its unique character, emphasizing elegance and balance. Situated on the hillsides in Monforte, the vineyards yield grapes for their Fresia, Dolcetto, Barbera, and three distinct Barolo crus. Bottling their own wines since the 1990s, the estate's reputation is catching up to the quality of their offerings. Le Coste di Monforte, Mosconi, and Ravera di Monforte represent their distinctive terroirs, offering approachability and aging potential.

Toscani
Italy | Tuscany | Costa Toscana IGT

In the late 90s, Rocco Toscani and his father Olivero Toscani planted a breathtaking amphitheater-shaped vineyard in Tuscany. Rocco returned in 2014 after pursuing photography abroad. With the support of experienced winemakers such as Attilio Pagli and Valentino Ciarla, as well as agronomist Federico Curtaz, he implemented significant changes to maximize the vineyard's strengths and terroir. The focus was on crafting wines that truly showcased the grapes' unique qualities, from crisp freshness to captivating intensity. They shifted to organic production methods, utilizing beneficial insects instead of chemicals. After years of dedication and hard work, the estate has discovered its true identity by embracing and showcasing the finest offerings of the land.

Folium Vineyard
New Zealand | Marlborough | Brancott Valley

Folium Vineyard is located in Marlborough, New Zealand, producing exceptional organic wines from their 8 hectares of dry-farmed vineyards. This is a rarely used practice in New Zealand wineries, but winemaker Takaki Okada believes it helps produce wines that truly reflect the terroir and vintage differences, instead of producing the same flavours year after year.

Minimalist Wines
South Africa | Western Cape | Elim, Elgin

Minimalist Wines is all about Sam’s fascination with minimal intervention and letting each vineyard tell its own unique story. It is about focusing on varietals he loves, treating them gently in the cellar, and then allowing nature to shine, rather than delivering formulaic wines each vintage. His passion is Syrah, but his adventurous spirit compels him to bottle small batches of interesting vineyard discoveries he makes every year under the EXPERIMENTAL label.

Sam made waves at 21 with his debut Stars in the Dark Syrah 2018 when he was still an Oenology student at the University of Stellenbosch, impressing a London trade tasting with its transparency and vibrant acidity.

Even if you've tasted his wines before, Sam has a way of surprising and delighting with each new vintage – he's always pushing the boundaries.

Artuke
Spain | Rioja | Baños de Ebro

Artuke, a small winery in Rioja Alavesa, was founded by Roberto de Miguel in 1991. Now led by his children Arturo and Kike, the winery is deeply connected to its surroundings. As part of the Rioja’n’Roll group, Artuke focuses on crafting unique wines that express their origins and terroir. They advocate for bottling Riojas based on regional, village, and single vineyard distinctions, similar to the Burgundian approach. They eschew the traditional Crianza, Reserva, and Gran Reserva classifications that solely define quality based on time spent in barrel. 

The vineyards are organically farmed, with hand-harvesting and indigenous yeast fermentation. Gentle, static-style fermentations take place in stainless steel and concrete tanks, followed by aging in French oak foudres. Soft filtration is employed before bottling.

Fulcro
Spain | Rias Baixas | Val do Salnes

Manuel Moldes Moraña's passion for winemaking led to the creation of Fulcro in 2009. Situated in Rías Baixas' Val do Salnés, this Spanish winery enjoys a mild, humid climate near the Atlantic Ocean. At Fulcro, terroir expression is prioritized, with sustainable practices employed in the vineyards. Their Albarino wines showcase floral scents, refreshing acidity, zesty citrus notes, and a touch of salinity. With extended aging in used oak barrels, Fulcro crafts wines with a fuller body and heightened complexity, setting them apart in the region.
