The Niagara Escarpment in Ontario provides an excellent environment for producing premium cool-climate wines due to its unique terroir of limestone-rich soils, moderated temperatures from the proximity to Lake Ontario, consistent winds and ideal slope and aspect of the lower escarpment slopes. It was this exceptional terroir that captivated Moray Tawse, who founded Tawse Winery in 2000 with a vision to "produce wines that represent a very specific terroir."
Inspired by the depth of character and sense of place in Burgundian wines, Moray Tawse recognized the Niagara Escarpment's potential as a world-class cool-climate wine region. He was particularly intrigued by the limestone-rich soils found along the escarpment, believing these were ideally suited for cultivating classic Burgundian grape varieties like Pinot Noir and Chardonnay. With this in mind, Tawse set out to establish his winery on the Niagara Escarpment, tapping into the exceptional conditions of this unique landscape to become a leading expert in crafting a wide array of distinctive, terroir-driven Canadian wines.
Since then, Tawse Winery has earned a reputation as an authority on cool-climate viticulture, producing an acclaimed portfolio of wines from grapes like Chardonnay, Riesling, Pinot Noir, and Cabernet Franc. The winery applies rigorous organic methods, keeping yields low to concentrate the vines' energy on ripening fewer, higher-quality clusters. The grapes are harvested at optimal maturity, meticulously sorted, and vinified to highlight the unique characteristics of each varietal and appellation.
Today, Tawse Winery has over 200 acres of vineyards and has been named 🏆Canadian Winery of the Year in 2010, 2011, 2012, and 2016, Tawse Winery now produces 30,000 cases of wines and has one of the largest portfolios of organic wines in the Niagara region.

Limestone Ridge is a 21.5ha plot planted almost entirely to Riesling. As the name suggests, it is the richest in limestone of Tawse’s vineyards and the most mineral-driven of the estate’s three single-vineyard bottlings. Scents of heather and green apple open on the nose, while grapefruit, lime and chalk embellish the palate. Light bodied but emphatic and intense, it has an explosive, lingering finish. Palpable sweetness is a welcome offset to the racy, spine-tingling acidity which should integrate further with more time in bottle. Drinking Window 2022 - 2028.

3/ Tawse Limestone Ridge North Riesling, Twenty Mile Bench VQA 2019 - Bt

The Limestone Ridge Riesling vineyard has been divided into 2 blocks. The North block for Tawse and the South block for Redstone. This organic Riesling block was planted in 2010 and offers a unique microclimate for cool climate varietals such as Riesling. The 2021 Riesling displays notes of slate, green apple, and peach. This off-dry palate is accompanied with notes of fresh apricot, lychee, and clementine.

The 4-acre Robyn's Block estate vineyard, named after Moray and Joanne Tawse's eldest daughter, is renowned for its exceptional Chardonnay. Planted on clay and loam soils, this is Tawse's oldest Chardonnay vineyard, producing barrel-fermented Chardonnay with a rich, textured profile.
Fermented and aged in French Oak for 12 months, this Chardonnay is wonderfully complex with notes of ripe honeydew melon, toffee and toast. The lengthy finish is bright, long and extremely satisfying. At first sip, you can instantly tell this wine is special.

Complex, layered and quite pure with very fine toast and nut notes as well as a main theme of citrus and pear, with fine-grained structure. Has lovely volume in the mouth with a fresh, finely spiced, limey edge. This is clearly similar to the 2012 in the way the fruit expresses itself. So lovely.

This is the biggest Chardonnay block. Windy site. This is fresh and lively with bright pear and citrus fruit, with good acidity and a fine spiciness. It’s very bright and focused: there’s some mid-palate richness but also good acidity. There’s a bit of structure, too. The oak is really well integrated.

Sourced from select Niagara Peninsula vineyards, the 2019 vintage provided very good conditions to produce concentrated and ripe wines. Aged in French oak barrels for 6 months, this Gamay shows enthusing aromas of cranberry, black pepper and graphite. On the palate, it is light-bodied, juicy and vibrant, and the finish is well-balanced.

THE MUST-TRY WINE Picked mid-November, Tawse’s 2017 Cabernet Franc was sourced from three growers. The diverse sites offer a range of soil: from heavy clay, to looser sand by the lake and some limestone clay loam. Inviting and intriguing from the get-go, with beautiful purity of raspberry, cherry blossom and liquorice. Fluid, mid-weight and elegantly composed, the palate is framed by gravelly textured tannins and energized by mouth-cleansing acidity. It lingers subtlety with a stony, minerally sensation. Utterly delicious!

9/ Tawse Grower's Blend Cabernet Franc, Niagara Peninsula VQA 2019 - Bt

Made from select Cab Franc vineyards in Niagara. The Grower’s Blend Cab Franc from the 2019 vintage is displays robust aromas and flavours of blackberry, cocoa and cedar. The tannins are firm but well integrated and the finish is long and smooth. A portion of the wines was aged in new oak, adding complexity to it.

Purchased in 2005, Quarry Road is Tawse’s second vineyard. Pinot Noir was planted in 2007 with a diverse mix of Dijon clones. Dark cherry aromas are infused with a smoky, sweet spice element from partial ageing in new barriques. Taut and linear on the palate, where crunchy fruit is accented by clove. Soft, fine-boned tannins firm up on the finish.

The 10th vintage from the Quarry Road Vineyard, this Pinot Noir spent 12 months in French oak barrels; 30% of which were new. An aromatic wine with notes of red currant, cherry cola, Bing cherry, anise and graphite. The palate is medium bodied with cherry, raspberry, black licorice and toast. This is certainly a wine that will benefit with decanting in its youth but will be a great addition to anyone’s cellar to enjoy once matured.

2020 is being hailed as the “Vintage of the Century” due to the near perfect weather. Warmer than average temperatures and minimal rain resulted in favourable conditions for ripening and flavour concentration in the grapes.
The 2020 Quarry Road displays notes of cherry, minerality, hints of earthiness and graphite. The palate displays tart cherry, blackberry and eucalyptus with bold tannins. Ageing this wine for one to 2 years to allow for flavour maturation is recommended.
13/ Tawse Tintern Road Pinot Noir, Vinemount Ridge VQA 2017 - Bt

This is only the 3rd vintage from the Tintern Vineyard. Aged 16 months in French oak barrels; 30% of which were new. An aromatic wine with notes of field berries and cassia, layered with cigar box. The palate is pronounced with bold, yet well-integrated tannins with minerality, red fruits and toast. This is certainly a wine that will benefit with decanting in its youth but will be a great addition to anyone’s cellar to enjoy once matured.

Tintern is Tawse's youngest estate vineyard, purchased in 2008 as a never planted property . The 2019 Tintern Road Pinot Noir is an expressive, structured wine. It displays an aromatic profile of dark berries, cherries, and cigar, with bold yet approachable tannins framing the palate of minerality, red fruits, and toast. The finish is smooth and pleasant. This Pinot Noir will benefit from decanting in its youth but also has the potential to reward cellaring.
15/ Tawse Cherry Avenue Pinot Noir, Twenty Mile Bench VQA 2019 - Bt | Jamie Goode 94

12.5% alcohol. A blend of David’s Block and Robyn’s Block. Whole berry ferment, and this was the first year with the optical sorter (this was through Vineland’s, the year before they got theirs). Sweetly aromatic, this has red cherries and spice on the nose, and follows through to a structured palate with nice firm, grippy tannins. There’s a grainy, savoury quality with some iodine and blood. This is so detailed and expressive, finishing dry and taut. This is almost Nebbiolo like in its quality.

16/ Tawse Barrel Aged Chardonnay Ice Wine, Niagara Peninsula VQA 2013 - Bt (200ml)

This is the second vintage of Chardonnay ice wine produced by Tawse, the first being in 2008. Ageing this dessert wine for 12 months in 100% new large oak barrels has resulted in aromas of vanilla, apricot, honey and a touch of oak. On the palate is caramel and a touch of smoke, followed by a surprising tart finish.
As Tawse has discontinued this Chardonnay ice wine, this would be the last time it's available.
17/ Tawse Cabernet Sauvignon Ice Wine, Niagara Peninsula VQA 2017 - Bt (200ml)

Sourced from 100% sustainably farmed Cabernet Sauvignon from Niagara Peninsula vineyards. Viticultural practices included vertical shoot positioning, shoot thinning, cluster thinning. Harvested at -8°C. Only 3,000 bottles are produced.
This is a surprisingly versatile icewine that can easily be paired with savoury and sweet dishes alike. Try it with blue cheese tarts or an assortment of cheeses for a contrast style pairing. Panna cotta with a red berry compote or a white chocolate raspberry cheesecake are perfect for a complimentary pairing. Of course, this “dessert in a glass” can be enjoyed all on its own.
